Mexican Corn Salad
If you are crazy about corn, this is a quick and easy salad that can be made ahead of time.
It's a good way to get several vegetables in your diet in one easy side dish.
It is very colorfuland looks nice in a white bowl.
Serves 6-8
2 cups of fresh or frozen corn
3 tomatoes chopped
1 can (2 1/4 oz) of sliced pitted ripe olives, drained
2 Tbsp taco seasoning
1/4 cup of canola oil
1/4 cup white vinegar
1/4 cup water
Directions:
In large bowl combine corn, tomatoes, olives.
In small bowl combine seasoning mix, oil, and vinegar.
Pour over corn mix and toss to coat.
Chill several hours before serving.
