The best source for fresh organic vegetables is your own garden. If you eat vegetable literally within minutes after picking them, they not only taste the best. They are also the most nutritious.

I will show you, step by step, how to start your own garden that is easy and fun that advocates using low maintenance Earthbox gardens rather than being a slave to weeds, spades and hoes.


Find a Farmers Market

organic tomatoesThe second way of obtaining fresh organic fruits and vegetables is at your local Farmers Markets. They are a great way to access food grown naturally without the use of pesticides or other chemicals.
Fruits and vegetables are fresher because locally grown food doesn’t to travel as far to get into your kitchen.

Build Your Own Favorite Salad

After you have obtained freshest ingredients, the next step to creating a perfect salad is to find the best recipe.

My salad recipes come from mainly friends and family.

We have been collecting and testing recipes for three generations. Our family's first cookbook was printed in 1931.

Food in my family is important in that this is a good way to share the day around the kitchen table.

We share our favorite salad recipes and experiment with new recipes and then send them off for review to our friends and other family members.

My family and I love salads. We eat salads everyday, sometimes more than once a day.

We all have very busy lives so we don't have time to make big meals. For me salads are the easiest way to feed a family. I will also include some salads that children will like.

I will also include salads from the 1930s and the 1950s especially ethnic recipes. They made salads differently and some of them you won't find except in old cookbooks.

Every week I will have a new recipe from our local Farmers Market. It is so good to have recipes that match the vegetables of the area.

Salad Recipe of the Week:

Root Vegetable Roast Salad

This recipe is from our local Farmers Market

Ingredients

1 1/2 pound  potatoes
3 small turnips
3 small (or 2 medium) peeled beets
3 medium (or 2 large) carrots
3 small cloves minced garlic
3 green sliced onions
1 heaping teaspoon  dried parsley flakes, or 1 tablespoon chopped
1/4 teaspoon crumbled dried leaf thyme
1/2 to 1 teaspoon freshly ground black pepper
1/2 to 1 teaspoon salt to taste
4-6 tablespoons olive oil (or other vegetable oil)

Directions

  1. Preheat oven to 375°.

  2. In a 2 to 3-quart baking dish, toss vegetables and herbs with the olive oil. Bake for 45 minutes. Uncover and increase heat to 425°.>li> Bake for another 15 to 20 minutes, stirring once, until vegetables are tender and lightly browned.
